Emilio Valerio Winery, located on the slopes of Montejurra, makes wines with soul, guided by the rhythms of nature and a deep respect for the land. They farm organically and biodynamically, without chemicals, using traditional methods like working the soil with horses. The result is honest, expressive wines that stay true to their origin.
Alongside their wines, they produce a unique extra virgin olive oil made exclusively from Arróniz olives, a native variety of the region. It’s a very limited production, around 3,000 half-liter bottles per year, with an exceptionally low acidity of 0.2%, reflecting the care that goes into every step. Like their wines, it’s a product rooted in the land.
